Ingredients (1 sandwich)
- 2 slices thick bread (sourdough, artisan white, or French loaf)
- 2 oz goat cheese, softened
- 1–2 oz shredded white cheddar or mozzarella (optional but recommended)
- 2 tablespoons honey (divided)
- 2 tablespoons butter, softened
- pinch red pepper flakes (optional)
- pinch black pepper (optional)
Optional add-ins:
- sliced pear or apple 🍐
- caramelized onions
- arugula
- chopped walnuts
- fresh thyme
These ingredient ratios closely follow popular versions of this sandwich, which typically combine goat cheese, honey, buttered bread, and optional red pepper flakes for a sweet-spicy contrast.
Instructions
1. Prepare the bread
Spread butter on one side of each slice of bread.
2. Build the sandwich
On the unbuttered side of one slice:
- spread goat cheese evenly
- sprinkle shredded cheese (if using)
- drizzle 1 tablespoon honey
- add red pepper flakes or pepper if desired
Top with second slice of bread, butter side facing outward.
3. Grill
Heat skillet over medium-low heat.
Cook sandwich 3–5 minutes per side until bread is golden brown and cheese is melted.
Tip: cover the pan briefly to help cheese melt evenly.
4. Finish
Remove from pan and drizzle remaining honey on top.
Let sit 1 minute, slice, and serve warm.
Flavor tips ✨
- Use medium-low heat so bread doesn’t burn before cheese melts.
- A small amount of honey goes a long way — you want balance, not overpowering sweetness.
- Add red pepper flakes for a sweet-heat combo that many recipes highlight.
